§6.3 Calculation Method (SOP)
Lab Trial: Add caramel dropwise to 100 mL whiskey sample until target colour reached. Formula: Caramel Required (L) = [Trial mL Added / 100] × Batch Volume (L) Colour Delta: ΔAU = Target − Current absorbance at 430 nm
3 SOP Procedure Reference
6.1
Pre-Addition Checks
Verify whiskey in IBC, volume, and target colour spec. Confirm E150a grade & expiry date. Ensure caramel at room temperature. Calibrate dosing equipment (500g weights available).
6.2
Caramel Preparation
Shake/stir container before use. If viscosity high, warm to 30–40°C max (indirect heating only). Record caramel density if required.
6.3
Lab Trial & Calculation
Take 100 mL whiskey sample. Add caramel dropwise to achieve target colour. Record mL added — use above calculator to scale to full batch. Cross-verify with colour specification limits.
6.4
Caramel Addition
Start gentle agitation in tank/IBC. Add caramel slowly near agitator vortex. Mix for 20–30 minutes. Take initial sample, visually check colour. Adjust in increments ≤10% of initial dose.
6.5
Post-Addition Mixing
Continue mixing 15 minutes for homogeneity. Rest whiskey 30–60 minutes for colour stabilisation. Collect samples for testing.

Quality Control
Visual colour check vs. approved batch OR spectrophotometer at 430 nm. ABV via Anton-Par — caramel drop should be <0.05%. Conduct 24-hour stability check: no sediment, no colour separation, no haze.

Complete 5.01.03 Caramel Colouring Record v003 and 5.04.02 ABV Calibration checks & Result. All liquid must be signed off by Liquid Manager & Quality Specialist before bottling.
